Bone Broth

I have had a lot of people ask me about why I am cooking bone broth so much. So I am just going to give you the down low of information of why I am cooking it once a week and why it is helping my daughter. This is a 27 hour process. No joke! 

I started cooking the chickens at 9:30 am yesterday and the broth will be done at 12:45 this afternoon. 

Everything I have learned the past month is…we are running a marathon, not a sprint.

Well, I am the kind that likes to sprint and get shit handled. Life doesn’t work this way, especially with Celiac. 

So, I have had to take a step back and be patient. Not my strong suit. I have done a TON of reading! I read to ease my mind and feel like I’m being proactive with all of this. It definitely has helped. Knowledge is power baby! I have learned that one of the best ways to heal her damaged villi in her small intestine is to drink bone broth. Since she is 2 (and picky as hell,) this is not easy. So I add it to scrambled eggs or spaghetti, make chickle noodle soup, and I even use it as a cooking oil sometimes. 

Back in the good ol’ days when everyone wasn’t overweight and dying of heart disease, bone broth was a way they used every part of an animal. Bones and marrow, skin and feet, tendons and ligaments that you can’t eat directly can be boiled. This simmering causes the bones and ligaments to release healing compounds like collagen, proline, glycine and glutamine that have the power to transform your health. (Thanks Dr. Axe)

So, I buy all of my meat free range, organic, grass fed, etc….and all BONE IN! I am buying turkey legs and whole chickens mostly. Then I save the bones, make the broth, then give my dog all the bones. Buster is loving this by the way. His coat has gotten so much prettier too. 

Yes, the meat costs more than the rest, but we don’t eat out anymore and we use every last bit of the animal. I was getting the chicken off the bones yesterday and just started chowing down. I honestly feel like we are on Naked and Afraid sometimes…..In fact, that is exactly what your first month of gluten free is like! Naked of carbs, afraid of food. Yep. 

Looking at the picture of Chloe from a month ago makes me feel like we are halfway through our marathon. I know we are not even close, but to see the difference in her color and size makes me feel like all of these changes (plus hours and hours of reading) are worth it! I will continue to make bone broth every week or so. I get about 3 jars every time and use it as much as possible. 

I placed my first order to Thrive Market this week which has a ton of things I have wanted at a discounted rate. I ordered so many organic (gluten free, dairy free, corn free) mayos, salad dressings, oils, and a ton of staples I needed. I have also upgraded all of my spices to Wild Tree because they are gluten free. They even make a Mac and cheese blend, but that’s a present for Connor! 

A month ago I wouldn’t have had a clue about any of this. I am thankful for all of the people who have been properly placed in my life to guide me on this journey. I would be lost without you! 

I feel like we have come so far as a family and to see such huge changes in us I hope can inspire you! Yes, YOU!! Especially those of you that have reached out to me worried about yourself or your child. Please give it a go. You will be glad you did. 

I read something online yesterday that said food allergies in children have increased 50% since 1997. That is disturbing.

So when I started all of this, I had no intentions of becoming obsessed with the results for myself. I just wanted Chloe to start healing. I was going through pictures and have to show you what a big difference a month of really clean eating looks like. The picture on the left was taken on my birthday, May 28th. The picture on the right was taken June 24th. 

These pictures speak for themselves. 

Gluten was bad for me. 

My inflammation is down so much, I am down at least 2 sizes and almost 15 pounds. Hell, 20 pounds if you count the stress weight. 

I’ve quit coffee, sugar, dairy almost completely. I’m a sucker for those Herbert’s Lemonades, but other than that, I’ve been doing so well. I DON’T EVEN CRAVE TACO BELL anymore!!!! Yes, no doubt about it. I would much rather have chicken and salsa wrapped in lettuce. I’m noticing what foods make me feel good and what foods I can do without. My taste buds have changed completely. I am on like day 34ish and have no desire to go back. I know at some point I will have to deal with real life situations like restaurants, but for now, I’m just enjoying feeling good. 

Our meals are getting tastier every day. I post most of the new ones on Instagram, but we are starting to learn what we like and we repeat them a lot. Chloe is getting better about food and less picky daily. I still can’t get her to eat a beet or sauerkraut,  but one day I will!
